We all know mango as a delicious, juicy, and tropical piece of fruit. But mango is a great addition to a summer BBQ. How about a delightful mango salad, great with meat or fish. Getting hungry already? Get started with the recipe below!
For the dressing:
– 1/2 – 1 tablespoon dry beef rub
– 2 teaspoons honey
– Juice of half a lime
– 2 tablespoons mild olive oil
– 1 shallot (optional)
– Chili flakes, to taste
For the salad:
– 200 grams of little gem lettuce
– 1 large mango
– 1-2 red sweet peppers
– 70 grams of salted macadamia nuts
– Garnish: fresh mint, coriander, and/or lime wedges
1. Start by making the dressing. Finely chop the shallot. Then mix the dry rub with honey, lime juice, and shallot. Carefully add the oil and stir until all ingredients are combined. You can always add more lime juice, rub, chili flakes, etc., to taste.
2. Peel the mango and clean the pepper. Cut into strips or cubes.
3. Chop the macadamia nuts.
4. Place the little gem in a nice bowl, or chop finely if preferred. Add the mango, pepper, nuts, and dressing in the bowl and mix carefully. Optionally, sprinkle fresh mint or coriander over the salad or serve them on the side.
